Ingredients
5 Tablespoons vegan buttery spread
1 teaspoon vanilla extract
4 cups powdered sugar
3 Tablespoons non-dairy milk
Instructions
1. Place the vegan buttery spread in a mixing bowl and mix on medium speed until fluffy. Add the vanilla extract.
2. Sift the powdered sugar in a little at a time, alternating with drizzling in a little bit of the non-dairy milk. Continue to do this until all the sugar is incorporated and the frosting is a smooth, creamy, consistency.
3. If the frosting gets too thick, add a little more non-dairy milk. If it gets too runny, add more powdered sugar.
4. Spread the frosting on your cake or cupcakes with an offset spatula, or pipe it on using a decorating bag and an icing tip.
Recipe Notes
This recipe makes enough frosting to frost an 8-inch single layer cake or about 14 cupcakes.
(Sep 3, 2018 - We had to add noticably more cashew milk that the recipe called for - more like 5 or 6 tablespoons. Might want to try adding more margarine next time)
